Mr. Oliver Campos, the Asian Pacific Export Manager, shared with us the 5 wonderful Jailliance sparkling wines and enjoy them with French Cusines. Jaillance hails from the Drome district in Rhone Valley of France. It is a renowned sparkling label in the country. Clairette de Die and Cremant de Bordeaux, the products under its flagship, are predominantly made from Muscat and Clairette, and come with an exceedingly high quality, which rival champagne in popularity. Food & Wine Pairing Menu: 1. Crab & Apple Salad w/ Lemon Dressing Paired w/ Jailliance Cuvee de L'Abbaye Brut N.V. Tasting Note: Good attack w/ a creamy mousse & pleasing balance. Inital aromas are carried forward to the palate, w/ brioche notes on the finish. 2. Baked French Escargot w/ Herbs & Butter Paired w/ Jaillance Grande Reserve 2007 Tasting Note: Elegant persistence & pleasing balance, candied citrus fruits aroma w/ a liquorice finish, 3. Pan-Fried French Duck Breast w/ Jailliance Clairette de Die & Orange Soy Sauce Paired w/ Jailliance Cuvee de L'Abbaye Rose N.V. Tasting Note: Notes of Raspberry & redcurrant, w/ added persistent strawberry & a hint of vanilla on the finish. 4. Pan-Fried French Duck Liver w/ Balsamic Vinegar Paired w/ Jailliance Clairette de Die Sweet N.V. Tasting Note: Very aromatic Muscat nose of Citrus Fruit. Fruity on the palate w/ a hint of white flowers, rose & lychee. 5. Bleu d'Auvergne Cheese & Fresh Grapes Paired w/ Jailliance Cuvee Blanche Icone 2009 Tasting Note: Delicate aromas of white flowers mingle w/ the sweet scents of exotic fruits.
